Martini tray

Introducing the Plateau Martini, a twist on the classic French Martini that uses gin rather than vodka and tonic rather than pineapple, ingredients that are very Québécois. A fresh, powerful, slightly bitter cocktail, where citrus and candied fruit notes dominate the palate, with a delicate floral finish.  

Martini Plateau, with 1642 elderflower and fou gin

Ingredients 
  • 2 oz of Fou Gin
  • ½ oz. red vermouth
  • 4-5 fresh blackberries, crushed
  • ½ oz. grapefruit juice
  • ¼ oz. lime juice
  • A dash of egg white
  • A few drops of floral bitter (optional)
  • 1½ oz of 1642 tonic elderflower.
  • Ice cubes

Preparation:

  1. Mash the blackberries in a shaker with the vermouth
  2. Add all ingredients except 1642 tonic elderflower
  3. Shake without ice cubes(dry shake) to emulsify the egg white
  4. Add ice cubes and shake again
  5. Add the 1642 tonic elderflower directly into the shaker and mix gently with a spoon.
  6. Double filter the whole in a cup
  7. Garnish with a few blackberries.
