This bright red cocktail from mixologist Fanny Gauthier has everything to please with its citrus flavours and the acidity from the cranberry-raspberry juice. It also contains orgeat syrup, a drink made with almond milk and orange blossom water, and it's layered with a Quebec tonic.

Photo and recipe by Distillerie Wabasso Ingredients 1 oz of Wabasso gin 1 teaspoon of honey Thyme leaves ice Tonic Light 1642 A little grated ginger Preparation: In a tall glass: Pour in the gin Mix in the ounce 1 teaspoon of honey and some thyme leaves Add the ice Add 4oz of Tonic Light 1642 To finish, grate some ginger over the top and garnish with a sprig of thyme.
