At the heart of the composition, St-Laurent Gin from Distillerie St-Laurent (Distillerie Arsenal) stands out with its authentic character and rich aromas of the sea. This carefully crafted gin evokes the freshness of sea herbs and salty scents. The Noilly Prat dry vermouth adds an elegant, subtly bitter dimension and reinforces the complexity of the blend. This fortified wine always balances the finesse and strength of the other spirits. A small dose of Chartreuse verte is integrated, creating an elegant and intriguing aromatic profile. This herbal liqueur accentuates the cocktail's depth.
Complementary ingredients include lemon juice, simple syrup and Mirin Mito syrup. The latter enriches the aromatic profile with its delicate umami. The real maritime anchor is found in the bold incorporation of Stimpson surf clam brine canned by Crabiers du Nord. Adding a salty note, this surprising touch is reminiscent of marine flavors. The amount of brine is measured out to intensify the marine flavors without overpowering them. To finalize this creation, light tonic 1642 is used for its effervescence and fine, sparkling bubbles.

Ingredients
- 1.5 oz Gin St-Laurent Distillerie St-Laurent
- 0.5 oz Noilly Prat dry vermouth
- 0.25 oz Green Chartreuse
- 1 oz Lemon juice
- 0.75 oz Simple syrup
- 0.25 oz Mirin Mito syrup
- 0.25 oz Canned Stimpson Crabmeat from Crabiers du Nord
- Tonic 1642 light
- Stimpson surf clam trim
Preparation:
- Place all ingredients in the base of a shaker
- Fill with ice and shake the mixture
- Double strain into a cooled bowl
- Lengthen with tonic 1642 light
- Decorate the glass with a piece of surf clam
