A "smash" is, by definition, a cocktail in which a fruit or herb is smashed to get all the flavour out of it. Since Ontario peaches are in season, and are particularly juicy and sweet, this cocktail is perfect for August... (or anytime you have peaches on hand).

Ingredients
- Mint leaves
- Ripe peach wedges
- 0.5 oz of brown cane sugar syrup
- 2 oz. Bourbon Bulliet (or Whiskey of your choice)
- 1 oz of Maison Sivo peach liqueur
- 1 dash ofAmer Kebek walnut
- Ginger beer 1642
Preparation:
- In a shaker, place the mint, peaches and cane syrup
- Crush the whole with a pestle
- Add remaining ingredients to shaker with ice
- Shake for 15-20 seconds to mix the flavours and cool the cocktail
- Pour into an Old Fashion glass full of crushed ice, double straining to avoid spilling debris
- Stretch with Ginger Beer 1642
- Shake gently with a bar spoon to homogenize the flavours
- Garnish with peach slices on a pick
