Baie-Comeau-based Distillerie Vent du Nord is renowned for its artisanal approach and use of local ingredients in its spirits. Their plum brandy is part of this approach, offering a pure and authentic expression of the wild plum.
At the heart of the Plaisir de Prune cocktail are captivating fruity flavors. Plum brandy is the base of the blend. It has both fruity and floral notes. The fermentation of plums combined with the addition of fleshy saskatoons (small berries) creates a unique taste.
To complete this base, I use Vignoble Amouraska yellow plum cream. Its taste and texture are unique in cocktails. You can also use Prunelle de Bourgogne liqueur or Choya Japanese plum liqueur. These plum liqueurs bring not only sweetness, but also a depth of plum flavor.
The secondary elements of the blend are simple, but important to respect. Homemade peach syrup provides a natural aromatic bridge to the plum flavors. Lemon juice is used to balance the cocktail. Two dashes of Fee Brothers plum bitters (optional) add a slight bitterness and subtle spicy notes that enhance the plum flavor, giving it more complexity.
Finally, the light Tonic 1642 lengthens the cocktail, giving it a delicate effervescence and a refreshing finish. The choice of a light tonic is a wise one, as it allows the fruit and spirit flavors to remain in the foreground without being masked by the bitterness or sugar more present in a classic tonic .
Finally, an apricot wedge is used to decorate the cocktail. Apricot, a close cousin of plum and peach, reinforces the stone fruit theme and adds a visual note. The basil head, meanwhile, offers a herbaceous, aromatic contrast that elevates the cocktail's fragrance when tasted.

Ingredients 

  • 1.5 oz Eau de vie de prune Distillerie Vent du Nord
  • 0.75 oz Vignoble yellow plum cream
  • Amouraska or Liqueur de Prunelle de Bourgogne 1 oz Lemon juice
  • 0.75 oz Homemade peach syrup
  • 2 Fee Brothers plum bitters (optional)
  • 2 oz Tonic 1642 light
  • 1 apricot quarter
  • Basil head

Preparation:

  1. Place all ingredients in unshaker base
  2. Fill with ice and shake the mixture
  3. Double-strain into a chilled cup containing 2 oz. of 1642 light tonic .
  4. Garnish with an apricot wedge and a basil head.
