Prepare to be transported to the heart of Gaspésie's bountiful nature with the Chant du Cormier cocktail. The Cap-aux-Péchés distillery has just released two spirits. The first is Immortelle gin, aged in mead barrels, and the second is a liqueur made from cormier or mountain ash.
This cocktail combines its two new spirits to create a true sensory immersion, a tribute to the craftsmanship and unique flavors of our terroir. At the heart of this experience is Distillerie Cap-aux-Péchés' aged Immortelle gin. Not only floral and delicate, this gin is aged in mead barrels, giving it a roundness and subtle notes of honey and wood, a complexity rarely achieved. It embodies the wild and refined spirit of our land, where birdsong resounds.
Alongside it, Liqueur de Cormier Cardinal, also from Distillerie Cap-aux-Péchés, adds a unique fruity dimension. Cormier, the little-known fruit of our boreal forests, offers elegant bitterness and aromas reminiscent of apple, pear and even a hint of citrus, creating a delicate bridge with the gin's floral profile.
Lemon juice and honey syrup play an essential role, bringing a freshness and sweetness that balances the richness of the spirits. The honey, in particular, resonates with the subtle notes derived from the gin's aging in mead barrels, creating a soft, lingering harmony.
Finally, the light tonic 1642 aerates the whole, adding a delicate effervescence. The raspberry skewer is more than just a garnish: it adds an extra fruity touch, a bright color and a fresh aroma.

Ingredients
- 1.75 oz Aged Immortelle Gin Distillerie Cap- aux-Péchés
- 0.75 oz Cormier liqueur Cardinal Distillerie Cap-aux-Péchés
- 1 oz Lemon juice
- 0.75 oz Honey syrup
- 2 oz Tonic 1642 light
- 1 Raspberry skewer
- 1 Lemon twist
Preparation:
- Place all ingredients in the base of a shaker, except the tonic
- Fill with ice and shake the mixture
- Double-strain into a chilled cup containing 2 oz. of light 1642 tonic .
- Decorate with a raspberry skewer and a twist of lemon.
