Ingredients
- 1.5 oz Seaweed Gin Distillery Newfoundland
- 0.5 oz Noilly Prat dry vermouth
- 0.25 oz Green Chartreuse
- 1 oz Lemon juice
- 0.75 oz Simple syrup
- 0.25 oz Mirin Mito syrup
- 0.25 oz Canned Stimpson Crabmeat
- 1642 Tonic Léger
- Sesame seeds
- Topping: Stimpson surf clams, smoked salmon rose and caplan caviar
Preparation:
- Decorate the rim of the glass with sesame seeds and set the glass aside
- Pour all liquid ingredients into the base of a shaker, except the tonic
- Fill with ice and shake the mixture
- Double strain into a chilled cup containing 2 oz Tonic 1642 light
- Decorate the glass with a piece of surf clam and a smoked salmon rose
- Place caplan caviar on the mousse
